Pickling Gherkins

  1. Wash the cucumbers, remove stems and fit them into the sterilised jars. Add the onion rings, dill, carrots, cucumber slices and spices to the cucumbers.
  2. Bring the vinegar, water, salt and sugar to the boil. Pour the hot brine into the jars of cucumber and spices then seal immediately.
  3. Put the jars into a large pan full of water at 80 degrees C and sterilise for about 20 minutes on the stove. The jars should be covered by at least 3 cm of water.

As the year winds to a close, we often experience fairly changeable weather around the Christmas/New Year time.
Aside from a few drops of rain, we have been pretty lucky so far.
Taking a trip to Devonport,we ventured up Mt Victoria to see the view.

Morning Tea at Work

Shot on my iPod touch, we had a great Christmas morning tea at work the other day in celebration of the season, and closing of year for some staff. My workplace does not actually close down at all, but I’m now off away on leave. Feels like I have not had a break this year.

My Team Down Below

Catching my breath, I reach the top. It’s high! – but dunes just being a pile of sand, I find it hard to gauge the height. My work colleagues are small dots though.

Running across the crest of the dune, I gradually work my way back down to the river and the others. Wading through the river, it exits again in the bush, where we started, back to the car park.

Down the valley, a river following the dunes, they rise above you like a giant wave of sand.

I climb up the side of the dune, having to dig my hands into the sides as well as feet, the soft sand and steep gradient giving one the feeling they could tumble back at any stage.

We hit the lake side, and then make a gradual climb up the hill beside it. Some of this land is still in private ownership, and the track access gifted to the local council for the use of the people (and visitors) of Auckland.

As we hit a gate at the top of the climb, the dunes come into focus again.
